Old Irving Brewing Co. is a craft brewery in Chicago’s Old Irving Park neighborhood that has been operating a Wild Goose Evolution Series since early 2019. After countless cans and a fill head upgrade, they have something to say about it! We spent the day with Old Irving Brewing’s Head Brewer and Co-Founder, Trevor Rose-Hamblin, discussing Old Irving’s history and their choice to go with Wild Goose.
